Why the interior color of your pot matters
When choosing a pot to buy (like a dutch oven), you may not think too much about what color it is on the inside but it matters. If you’re looking to put some color on the food or create a fond (browned and caramelized bits that stick to the bottom a.k.a flavor), often the difference between perfection and burnt is just a few minutes. If the interior of the pot is dark, it’ll be much harder for you to tell how dark the fond or food is getting. If it gets burnt, your whole dish may taste burnt.
